I think there are so many mushroom references because the Demogorgon itself looks a flower fungus hybrid. It’s carnivores flora.

I think the Deer Lung add-on might actually be referencing the injured deer found by Nancy and Jonathon in Episode 5 of Season 1, not just the Demogorgon's diet.
the rat tail and liver could be referencing when the mind flare was controlling those rats to use for itself

The rat stuff I think is from the rats in season 3. I think Jonathan and Nancy find a dead deer in season 1 too, which might be where the deer lung is from. Good video, I've always liked how they picked the add-ons for licensed characters : )
